These bring me back to my childhood, teetering on the edge of a chair so I could reach the counter to help my mom bake! These are one of the first things I learned how to make along with chocolate chip cookies - both classics in my opinion! These are vegan, dairy free and gluten free, so everyone can enjoy them!
1 bag Dandies Vegan marshmallows
¼ cup vegan butter, I used Earth Balance Original Buttery Spread
½ teaspoon vanilla extract
3 cups rice cereal, Gluten Free
¼ cup rainbow sprinkles
Method of Preparation:
Melt the butter and the marshmallows over medium heat, stirring frequently until the marshmallows are completely melted. Remove from the heat and stir in the vanilla, rice cereal and sprinkles!
Pour the rice crispy mixture onto a piece of parchment or way paper. Top with another piece of wax paper and press down until they are about 1-inch-thick, shaping the sides into a rectangle as you form them.
Cool until firm, then cut into squares!
Eat the warm leftovers right out of the pan, that's my favorite part! :) Happy Baking!
