Lemon Poppy Granola

This granola was created so I can pretend I'm eating lemon poppy cake for breakfast, but without the guilt! This granola gets a lovely zing from the lemon juice and zest and adds the perfect crunch to your morning yogurt or smoothie! It's so good you will want to eat it by the handful!


2 cups gluten free rolled oats

1/4 teaspoon salt

1/8 teaspoon ground ginger

2 tablespoons poppy seeds

1 2 tablespoons flax meal

1/4 cup desiccated coconut

2 tablespoons coconut sugar

6 tablespoons maple syrup

3 tablespoons coconut oil, melted

Juice from 2 lemons, if you like it less lemon-y just juice 1 lemon

Zest 1 lemon

1 tablespoon vanilla extract

Method of Preparation:

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

In a large bowl combine all of the ingredients and toss to coat the oats thoroughly.

Pour the mixture out onto the baking sheet, bake for 25 to 30 minutes or until the granola is golden brown!

Allow to cool before breaking up the granola!

I love eating this over So Delicious Coconut Yogurt! It is the perfect way to start your day!
