Fudgy Raw Brownie Bites


These brownie bites are seriously my favorite dessert! I usually have one every single night with my cup of herbal tea!


I was inspired to make these because I miss Spring Bone Kitchen in NYC. I would go there for a cup of soup and a brownie bite on nights I had 3 hour lectures at NYU. These brownie bites quite literally fueled me through my master degree in Food Studies!


I miss NYC and wanted to make these to bring back some yummy memories!



Ingredients:

8 medjool dates, pitted

1 1/3 cup raw walnuts, chopped

1/4 plus 1 tablespoon unsweetened cacao powder (plus more for rolling)

1 tablespoon maple syrup

1 tablespoon water

1 teaspoon vanilla extract

Pinch of kosher salt


Method of Preparation:


In a food processor pulse the walnuts until it turns into a fine sand-like texture. Add the dates, cacao powder, maple syrup, water, vanilla and salt. Pulse until the mixture turns into a thick brownie batter-like mixture. If you find the mixture is too runny to form into a ball, add 1/4 cup of walnuts until the mixture can be formed into a ball.


Scoop the brownie mixture using a small ice cream scoop and roll into a ball. Repeat until all the brownie mixture is gone. Roll the brownie bites around in more cacao powder to coat the exterior. Store in the refrigerator until ready to enjoy!
