Vegan Caramel "Turtles"

These might just be the cutest treat ever! If you want a vegan version of this classic nutty treat, this one is for you!




Ingredients:

1/2 cup chopped pecans

1/2 cup medjool dates, pitted

Pinch salt

35 whole pecans

1/2 cup dark chocolate chips, dairy free

1 teaspoon coconut oil



Method of Preparation:


In a food processor process the dates until a paste forms, then add the pecans. Process again until the mixture pulls together and holds its shape when squeezed in your hand.


Using a small ice cream scoop, scoop the pecan mixture into mounds and place on a parchment lined baking sheet.


Press the mounds into discs about 1/2-inch thick. Press the whole pecans into the date mixture so that it resembles 2 arms, 2 legs and the head of a turtle; repeat with the remaining.


Melt the chocolate and coconut oil in a microwave safe bowl in 30-second increments, stirring in between, until smooth.


Spoon the melted chocolate over the top of the caramel turtles so that the pecan mixture is fully covered. (It's okay if the chocolate drips down the sides and creates puddles.


Refrigerate until the chocolate is set, about 30 minutes.
