The Easiest 5-Ingredients Peanut Butter Cookies

Yep, just 5 (okay 6 with salt... but is that considered an ingredient? Nah!) These are so easy to whip up when you want something sweet but don't want 1,000 dishes to wash or spend 2 hours making some intricate dessert. One bowl, 5 ingredients and these cookies are in the oven in under 10 minutes! So simple, yet sooooo good!




Ingredients:

1 flax egg ( combine 1 tbsp flax seed meal + 2 1/2 tbsp water - stir to combine and set aside to thicken for 5 minutes)

1 cup thick peanut butter (not super runny) like Justin's

1/2 cup granulated sugar or coconut sugar

1/2 cup dark brown sugar, packed

1 teaspoon vanilla extract

Pinch salt


Preheat the oven to 375 degrees F. Prepare a baking sheet with parchment paper.


Make the flax egg and set aside.


Combine the rest of the ingredients in a medium bowl and mix thoroughly to combine.


Add the thickened flax egg to the cookie mixture and mix again until no streaks remain and the flax egg is fully incorporated.


Scoop the cookie dough using a small ice cream scoop or 2 spoons onto the baking sheet, leaving 2-inches between the cookies to leave room for spreading.


Bake until the edges are perfectly golden brown and the center looks set, about 10 to 12 minutes, rotating the pan halfway through baking.


Allow to cool on the baking sheet for 10 minutes before moving the cookies to a cooling rack to cool completely.


Note: These cookies can be sprinkled with flaked sea salt, sprinkles, chocolate chips, or chopped peanuts prior to baking. They can also be dipped in chocolate or drizzled once baked!
