This cake is so light and fluffy! It is perfect to transform into a Funfetti Cake or cupcakes! This recipe is a classic that you will find yourself reaching for when special occasions pop up!
1 cup oat flour
1 1/2 cups King Arthur Gluten Free All-Purpose Flour
2 teaspoons baking soda
1 cup coconut sugar
Pinch kosher salt
1 1/2 cups oat milk
1/2 cup avocado oil or a neutral oil
1 tablespoon apple cider vinegar
1 tablespoon vanilla extract
Dairy-free non-stick baking spray
Method of preparation:
Preheat the oven to 350 degreed F. Spray two 8-inch round cake pans with non-stick baking spray.
In a large bowl whisk together the oat flour, all-purpose flour, baking soda, sugar, and salt.
Add the oat milk, oil, vinegar, and vanilla and whisk to combine. The batter should not have any lumps!
Divide the evenly between the two pans and bake for 25 to 30 minutes or until the edges are golden and a toothpick inserted into the center of the cakes comes out clean.
