This is the perfect July 4th breakfast or dessert! Instead of loading up my July 4th treat with food coloring, I opted for the natural version! Raspberries give this pudding a vibrant red color, not to mention a delicious, fruity flavor!
2 cups coconut milk
2 cups frozen raspberries
3 tablespoons light agave nectar
Zest 1/2 lime
8 tablespoons chia seeds
1/4 cup coconut, for topping
Blackberries or blueberries for garnish
Method of Preparation:
In a blender, combine the coconut milk, raspberries, agave and lime zest. Blend on high until smooth.
Pour the raspberry mixture into a bowl and add the chia seeds. Mix the chia seeds into the raspberry mixture until they are evenly distributed.
Pour the mixture into glass containers and store in the refrigerator until set. I like to refrigerate mine overnight for the next morning.
Top with coconut and berries!
