If you love rice cereal treats and also love peanut butter, these are for you! These treats include peanut butter in 3 ways! Creamy peanut butter melts into the marshmallows to create a peanut butter-y marshmallow, peanut butter puffs are the star of these treats, and salted peanuts are mixed in for an added crunch! There is so much peanut butter-y goodness here! I'm excited and I hope you are too!
4 tablespoons (1/2 stick) Earth Balance Vegan Butter
1/4 cup peanut butter, I used Justin's
2 cups mini marshmallows
1/2 teaspoon vanilla extract
2 1/2 cups peanut butter puffs, I used Nature's Path Panda Puffs
1/2 cup salted peanuts
Coconut oil, baking spray
Method of Preparation:
Line a loaf pan with parchment paper and spray with non-stick baking spray.
In a medium pot, melt the vegan butter, peanut butter, and marshmallows, stirring constantly until completely melted and the mixture is smooth. Stir in the vanilla extract and remove from heat.
Stir in the peanut butter puff cereal and the salted peanuts. Pour the mixture into the prepared baking dish and press down with the spatula so they are spread out evenly.
Freeze for 35 to 40 minutes or until firm. Cut into squares using a sharp knife.
