Peanut Butter Oat Mug Cake

This mug cake comes together in no time at all and tastes like a peanut butter cup turned into a cake! Oat flour is the secret ingredient when it comes to creating this fluffy cake in under 5 minutes!


I dolloped a heaping tablespoon of my favorite peanut butter into the center of the cake to create a molten peanut butter center! The best part about this cake is you can make it totally sugar free or sweeten it to your liking! If you want to eat cake for breakfast this is the way to do it!




Ingredients:

6 tablespoon oat milk

2 tablespoons neutral oil

2 tablespoons coconut sugar or date sugar (optional)

6 tablespoons gluten free oat flour

1/2 teaspoon baking powder

1/4 teaspoon cinnamon

Pinch of salt

1 tablespoon peanut butter, or nut butter of choice

Block of dairy free dark chocolate


Method of preparation:


In a large mug use a fork to mix together all the ingredients except for the peanut butter and chocolate.


Dollop the peanut butter into the center of the mug and spoon some of the batter to cover the peanut butter completely.


Microwave for 1 minutes then microwave in 15-second intervals until the cake has puffed up and springs back when touched.


Top with chocolate, fruit, extra peanut butter or whatever toppings make you HAPPY!
