Peanut Butter Cup Cake

This cake comes together in a mug! How cool is that?! Sometimes you need a dessert for 1 that you can whip up during the week. No need to turn the oven to make this adorable peanut butter-y cake! It taste like a peanut butter cup and is oh, so satisfying! If you have yet to make a microwave cake, there's no better day than today!



Ingredients:


2 tablespoons gluten free flour blend, I used King Arthur

1/4 teaspoon baking powder

2 tablespoons creamy peanut butter

2 tablespoons oat milk

1 tablespoon maple syrup

1/2 teaspoon vanilla extract

1 tablespoon dairy free dark chocolate chips


Method of Preparation:


Put all of the ingredients in a large mug. Using a fork, whisk the mixture together until it resembles cake batter!


Microwave the mug cake on high for about 1 minute. If the center still looks raw microwave in 15 second increments until the top is completely puffed.


Top the warm cake with the chocolate chips and allow them to melt before diving in. Or don't... you do you! :)
