No-Bake Oat Cookies

These are the perfect cookies to whip up during the hot summer months! No need to turn you oven on to enjoy these chocolate-y oat cookies! These cookies are chewy, chocolate-y and perfectly sweet! You can get away with eating them for breakfast (Shhhhh).



Ingredients:


1/4 cup coconut oil

1/2 cup maple syrup

1/4 cup oat milk

1/4 cup cashew butter

1/2 teaspoon vanilla

2 tablespoons cocoa powder

1 1/2 cups rolled oats

Pinch of salt


Method of Preparation:


Prepare a small baking sheet with parchment or wax paper.


Toss together the cocoa powder, oats and salt in a medium bowl.


In a small saucepan combine the coconut oil, maple syrup, oat milk, cashew butter and vanilla. Heat over medium low for about 2 minutes, or until the mixture is melted and completely cohesive.


Pour the mixture over the oats and toss until the oats are coated.


Using a medium ice cream scoop, scoop the cookie mixture out onto the prepared baking sheet.


Refrigerate for about an hour, or until the cookies have set!


Store in the refrigerator to keep them firm (especially in the summer!).
