These gluten free and vegan magic bars are just what the name implies... MAGICAL! Straight up unicorn food, rainbow sprinkles and all.
1 box Schar Gluten Free Graham Crackers, crushed
6 tablespoons earth balance vegan butter, melted
1 can (11 oz.) Coconut Sweetened Condensed Milk
1 cup mini chocolate chips, I used Lily's chocolate chips
1 cup shredded coconut
Method of preparation:
Preheat the oven to 350 degrees F.
Pour the melted "butter" into a 8x8-inch baking dish. Sprinkle the graham cracker crumbs over the melted butter to create an even layer. Pour the sweetened condensed milk over the graham cracker crumbs until they are completely coated. Sprinkle with the chocolate chips, followed by the coconut and sprinkles!
Bake for 20 to 25 minutes until the coconut is toasted and the edges are caramelized and golden brown. Cover with foil if the coconut starts to burn before the center is cooked.
Allow to cool before cutting into squares!
