I Love You So Matcha Granola

This granola is perfectly sweet and is finished off with a sprinkling of matcha tea! Not only does the matcha add a lovely green hue to this granola, it also has lots of health benefits! Delicious and nutritious - sign me up!



Ingredients:

1 1/2 cups gluten free rolled oats

1 1/2 cups unsweetened flaked coconut

1/2 cup pepitas

1 tablespoon ground flax seed meal

3 tablespoons coconut oil, melted

1/3 cup maple syrup

1 1/2 teaspoons vanilla extract

Pinch fine salt

2 teaspoons matcha powder



Method of Preparation:


Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.


Combine the oars, coconut, pepitas, flax and salt in a large bowl and toss to combine.


Stir together the melted coconut oil, maple syrup, and vanilla.


Pour the liquid mixture over the oat mixture and toss to combine, making sure the oat mixture is coated thoroughly.


Spread the granola mixture onto the baking sheet and bake until the granola is golden brown, stirring halfway through baking, 25 to 30 minutes total.


Allow the granola to cool before sprinkling with the matcha. Toss the granola to coat in the matcha tea.


Store in an airtight container.
