Homemade "Mounds" Bars
This is one of my favorite candy bars! So, I decided to create a simple, vegan & gluten free version that you can make at home! I love knowing how few ingredients go into these and how wholesome they are! These are the perfect coconut-y treat to whip up in your food processor. Trust me, you are going to go coconuts for these!

Ingredients:
1 ½ cups sweetened flaked coconut
3 tablespoons coconut oil
3 tablespoons coconut milk, full fat
½ teaspoon vanilla
Pinch of salt
1 ¼ cups dairy free dark chocolate chips, I used Lily's
1 tablespoon coconut oil
1 tablespoon desiccated coconut, for sprinkling (optional)
Method of Preparation:
Line a baking sheet with wax paper and set aside.
Combine all the ingredients in a food processor and pulse to combine.
Scoop tablespoon sized heaps onto the baking sheet and form into a small rectangular shape about 1 ½ inches long by ½ inch thick. Refrigerate until set.
Melt the chocolate and 1 tablespoon of coconut oil in the microwave, stirring every 30 seconds until fully melted.
Once the coconut bars have firmed up, drop them into the melted chocolate one at a time and use a fork to cover the bar and remove them from the melted chocolate. Shake off the excess chocolate and place on the baking sheet. Repeat until they are all covered, then sprinkle with coconut, sprinkles or leave em' plain! Then, pop them in the refrigerator to set the chocolate.
Store in an airtight container in the refrigerator.
