Golden Flax & Peanut Energy Balls

These are the perfect afternoon pick-me-up snack to help kick those 3pm sugar cravings! They are super simple and can be made ahead and stored in an airtight container.



Ingredients:


1 cup salted peanuts (Can substitute in your fave nut here instead!)

1 cup medjool dates, pitted

4 tablespoons flax meal

1 tablespoon coconut oil, melted


Method of Preparation:


Combine all of the ingredients in a food processor and process until the mixture packs together when squeezed in the palm of your hand. You should be able to roll it into a ball without it breaking apart. If it breaks apart, process a bit longer - if it is still too crumbly, add another tablespoon of coconut oil to help bind it together.


Take about a tablespoon-sized amount of the date mixture and pack it together in your hand. Then, roll the mixture into a ball; repeat until the mixture is gone.


Store in an airtight container in the refrigerator for the longest shelf-life!
