Gingerbread Energy Bites

These energy bites are loaded with cinnamon, ginger, nutmeg (basically all of your favorite holiday flavors) rolled into one little energy packed ball!


6 medjool dates, pitted

1/3 cup gluten free rolled oats

1/4 cup pepitas

1 tablespoon flax seed meal

3/4 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger

1/2 teaspoon vanilla extract

1 tablespoon water

Pinch of kosher salt

Method of Preparation:

In a food processor pulse the dates until they form a paste and ball up on the blade.

Add the rest of the ingredients and pulse until thoroughly combined. The mixture should pack together in your fingers when it is ready (if too crumbly, add another teaspoon of water until it packs together).

Scoop the mixture using a small ice cream scoop and roll into a ball. Repeat the with remaining gingerbread mixture.

Store in an airtight container in the refrigerator.
