Dark Chocolate Granola Butter Cookies




Ingredients:


1 cup chocolate granola butter, I used Kween

1 flax egg (1 tbsp ground flax meal + 3 tbsp water)

1/4 cup coconut sugar

3/4 teaspoon baking soda

1/2 teaspoon vanilla extract

Pinch salt

1/4 cup dairy free dark chocolate chips, I used mini!


Method of preparation:


Combine the flax meal and the water in a small bowl. Mix to combine and set aside for 10 minutes, or until the mixture thickens like an egg white.


Combine the rest of the ingredients in a medium bowl and mix to combine. Add the flax egg and mix to combine again.


Refrigerate for 1 hour.


Preheat the oven to 375 degrees F.


Scoop the dough and roll into golfball sized balls. Press to flatten with the palm of your hand. Place the cookies about 2-inches apart on the baking sheet!


Bake for 12-15 minutes, or until the edges are crisp.


Allow to cool. Drizzle with melted chocolate if desired!
