Cookie Dough Bites

Are you the type of person to eat the cookie dough out of the bowl before you even turn the oven on? Well, if you answered yes... these raw cookie dough bites are vegan, gluten free, refined sugar free and total EGG-LESS!!! Yes, so you can eat as much as you want without fear of upsetting your stomach! They are made with just a handful of healthy ingredients - so you can have your cookie dough and fuel your body! That is a win-win. if you as me?!

I am obsessed with Just Date Syrup! It is the perfect natural sweetener to add to all of your fave baked goods and raw treats! Unlike maple syrup that adds a slight flavor to your recipe, the date syrup just tastes sweet! This whole batch only has 2 tablespoons of sweetener in the entire thing! I am telling you these little cookie dough bites are going to be a hit with your friends and family! Personally I love freezing them and pulling them out when I sugar craving hits! They are the perfect little portioned bite to keep me honest about the amount of cookie dough I consume... lol.

Anyways, I hope you love these little bites as much as I do! Chocolate chip cookie dough was the first thing I learned how to make as a toddler, and holds a special place in my heart! To happy baking memories and all the cookie dough!


1/2 cup cashew butter, unsalted

1/2 cup gluten free oat flour

2 tablespoons Just Date Syrup or liquid sweetener of choice

1 tablespoon flax seed meal

1/2 teaspoon vanilla extract

Pinch kosher salt

1/4-1/2 cup dairy free dark chocolate chips

Method of Preparation:

In the bowl of a food processor combine all of the ingredients, except for the chocolate chips.

Process the mixture until smooth and looks like cookie dough! Scrape the sides as needed and pulse until all of the ingredients are thoroughly combined. Pour the cookie dough mixture into a medium bowl.

Add the chocolate chips and stir them in! I did 1/2 cup but if you want fewer chips then just add 1/4 cup. Scoop the dough using a small ice cream scoop and place on a plate or platter. Repeat until all of the dough is finished. Refrigerate or freeze until ready to eat!

If you wanted to dip the bottom in more chocolate - melt 1/2 cup dark chocolate chips and 1 teaspoon coconut oil in a microwave safe bowl in 30-second increments until smooth. Dip the bottom of the cookie dough bites and place on a baking sheet lined with parchment or wax paper. Refrigerate to set the chocolate!
