Cinnamon Roll in a Mug (for 1)

Yes, you can make a cinnamon roll in a mug in the microwave in under 10 minutes! Yep, no yeast, no proofing time, no fuss! This is the easiest cinnamon roll recipe ever and just so happens to also be gluten free, and vegan!


9 tablespoons King Arthur Gluten Free All-Purpose Flour

3/4 teaspoon baking soda

Pinch kosher salt

3 to 3 1/2 tablespoons oat milk or non-dairy milk of choice

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon, divided

1 1/2 tablespoons coconut sugar

Store-bought vanilla icing (I used Miss Jones Vanilla)

Non-stick baking spray - Coconut Oil or Avocado Oil

Spray the inside of a mug with the non-stick baking spray and set aside.

In a small bowl whisk together the flour, baking soda and salt.

Add the oat milk, vanilla and 1/4 teaspoon cinnamon and mix to combine. Once the dough is mixed together, knead it with you palm a few times. The dough should be stick but not too loose.

Sprinkle a little extra flour on the work surface and press the dough into a rectangle about 8-inches long by 4-inches wide. Spray the top of the rectangle liberally with the non-stick spray, then sprinkle the additional 1/4 teaspoon of cinnamon and coconut sugar to coat the top entirely.

Starting on the short end of the rectangle, roll the dough up into a log. Press the log, swirl side facing up into the mug. Spray with non-stick spray again and microwave on high for 1 minute to 1 minute and 30 seconds, the cinnamon roll should be puffed. Remove from the microwave and top with a tablespoon or two of the vanilla frosting. Microwave for an additional 30 seconds to melt the frosting over the top of the cinnamon roll.
