Chocolate Pecan Pie Granola
This granola is perfect for topping off your morning granola or smoothie bowl! It's vegan, gluten-fee and refined sugar free! Pie meets granola? I mean... what can be better than that?!

Ingredients:
3 cups gluten free rolled oats
2 tablespoons golden flax seed meal
2 tablespoons coconut sugar
1/4 teaspoon cinnamon
Pinch of salt
1/4 cup coconut oil, melted
1/4 cup pecan butter
1/4 cup light agave syrup
1/4 teaspoon vanilla extract
1/2 cup dairy free dark chocolate chips
Method of Preparation:
Preheat the oven to 350 degrees F. Prepare a baking sheet by lining it with parchment paper.
In a medium bowl combine the oats, flax seed meal, coconut sugar, cinnamon and salt. Mix to combine.
In a small sauce pot combine the coconut oil, pecan butter, agave and vanilla. Heat over low, stirring until the mixture comes together and no lumps remain.
Pour the pecan butter mixture over the oats and toss until the oats are completely coated.
Spread the oat mixture onto the prepared baking sheet and bake for 18 to 22 minutes, stirring occasionally until the oats are golden brown throughout.
Allow the oats to cool before pouring the chocolate chips over the top.
Store in an airtight container until ready to enjoy!
