If you love eating cookie dough straight out of the mixing bowl, this recipe is for you! These cookie dough bars are made with just a few ingredients and come together in no time at all! You will be eating cookie dough in no time!
2 1/3 cups oat flour
¼ cup coconut oil, melted + 1 tablespoon for the topping
¼ cup maple syrup
2 teaspoons vanilla extract
1 1/4 cups mini dairy free chocolate chips, I used Lily’s, divided
Method of Preparation:
Grease an 8x8-inch pan with coconut oil baking spray, and line with a strip of parchment or wax paper for easy removal.
Combine the oat flour, coconut oil, maple syrup, vanilla and ½ cup chocolate chips in a medium bowl, mix to combine thoroughly.
Spread the cookie dough into the prepared baking dish and press down to spread it out evenly.
Melt ½ cup chocolate chips with 1 tablespoon of coconut oil in a microwave safe bowl in 30 second increments, stirring in between until the chocolate has melted.
Pour the melted chocolate over the cookie dough mixture and spread out evenly using the back of a spoon.
Top the melted chocolate with the remaining ¼ cup chocolate chips for garnish.
Refrigerate until set, about an hour in the refrigerator or 30 minutes in the freezer.
Cut into squares using a sharp chef knife.
Store in an airtight container in the fridge!
