Chocolate Chia Truffles

These easy and healthy truffles are perfect for Valentines Day (or any day of the week for that matter)! They are so easy to make and seriously taste like fudge-y brownie bites...but HEALTHY!


Yes, healthy truffles can be a thing! These are loaded with dates, chia seeds and flax! They are the perfect chocolate-y treat to satisfy your afternoon sugar craving without the crash!



Ingredients:

6 medjool dates, pitted

1/2 cup raw walnuts

1/4 cup oat flour

1/4 cup cacao powder + 1 tablespoon (Need 1/4 cup more for rolling)

1 tablespoon chia seeds

1 tablespoon flax seed meal

1 teaspoon vanilla extract

2 tablespoons water - More as needed

Pinch salt

1/4 cup dairy free dark chocolate chips


Method of Preparation:


In the bowl of a food processor, process the dates until they form a puree and ball up on the blade.


Add the walnuts, oat flour, cacao, chia, flax, vanilla, water and salt; process until the mixture comes together and is relatively smooth! Add the chocolate chips and pulse 3 to 4 times just to combine.


Prepare a plate with 1/4 cup cacao powder for rolling the truffles.


Using a small ice cream scoop, scoop about 1 tablespoon of the mixture and roll it into a ball using the palms of your hands. Tip: Put a little cacao powder on your hands when rolling to prevent them from sticking. Roll the ball into the cacao powder to coat completely. Repeat until all of the truffles are coated thoroughly.


Store in an airtight container in the refrigerator! ENJOY! :)
