Birthday Cake Granola

This granola is seriously addicting!!! I couldn't stop eating it after it came out of the oven! If you are a sucker for almond flavored anything or just love sprinkles as much as I do, then this crunchy treat is for you my friend. The "birthday cake" flavor is really just a bit of almond extract - although you could definitely just add a lot of vanilla if you prefer.


I love making homemade granola because to be quite honest it usually tastes better than store-bought, has less sugar, and is WAYYYYYY CHEAPER! This is one of my favorite granola recipes I've created so far, and I hope you enjoy it as much as I did (had to use past tense because I demolished this stuff). OOOOPPPSSS.



Ingredients:

2 cups gluten free rolled oats

1/4 cup coconut sugar

1 tablespoon flax seed meal

1 tablespoon hemp hearts

1/4 cup rainbow sprinkles

Pinch sea salt

1/4 cup coconut oil, melted

1/4 cup light agave, honey or maple syrup

1/2 teaspoon almond extract

1/4 cup dairy free white chocolate, chopped (I used Pascha)


Method of preparation:


Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper.


In a medium bowl, stir together the oats, coconut sugar, flax, hemp, sprinkles and salt.


Add the coconut oil and the almond extract. Toss until the oats are completely coated in the coconut oil.


Spread out evenly onto the prepared baking sheet and bake for 20-25 minutes, tossing halfway through baking, or until the oats are golden brown.


Allow to cool for 10 minutes, then sprinkle the white chocolate chunks on top of the warm oats. Allow to cool completely then break into large chunks!


Store in an airtight container.
