Vegan PB & Cherry Rice Treats

These rice treats are next level thanks to the addition of peanut butter and dried cherries! It's like a PB&J meets rice crispy treat! These are a yummy sweet treat to have on hand and are sure to please everyone in your house!


I used vegan marshmallows which I find are a bit harder to melt compared to traditional marshmallows, so be sure to keep an eye on them when you are heating them up!


Be sure to melt the butter and marshmallows before adding the peanut butter - this will prevent the peanut butter from burning in the amount of time it takes to melt the marshmallows.


The dried cherries really add a fun pop of flavor and texture to this spin on a classic treat! You could also add dried cranberries as well if you don't have cherries on hand!




Ingredients:

4 tablespoons dairy free butter – I used Earth Balance Vegan Buttery Spread

1 ½ cups vegan marshmallows

1 teaspoon vanilla extract

¼ cup peanut butter

2 1/2 -3 cups gluten free puffed rice cereal

½ cup dried cherries, roughly chopped

Dairy-free non-stick baking spray


Method of Preparation:


Prepare a loaf pan by lining it with a piece of parchment paper overhanging on two sides to create handles. Spray the pan with the non-stick baking spray.


In a medium saucepot melt the butter and marshmallows, stirring frequently until no lumps remain. Turn off the heat then stir in the peanut butter. Add the rice cereal and dried cherries and mix until thoroughly combined.


Pour the mixture into the prepared pan and use a spatula to flatten the mixture down into the pan.


Allow to set for at least 1 hour before cutting into squares.
