Raw-some Brownies

These brownies are so rich and fudge-y, and the best part is... no oven needed! They are made using dates as the sweetener, so there is hardly any added sugar in these brownies! They are so indulgent, but totally guilt-free! My favorite type of brownie if you ask me!




Ingredients:

1 cup raw pecans

1 cup pitted Medjool dates

1/2 cup cocoa powder

2 tablespoons coconut oil

1 teaspoon vanilla extract Pinch of salt


For the ganache:

1/4 cup oat milk

1 cup dark chocolate chips, I used Lily's

2 tablespoons coconut oil

Pinch salt


Method of Preparation:


For the brownie base: Line a loaf pan with parchment paper overhanging on both sides so the brownies can be easily lifted out of the pan. Spray the sides and corners with non-stick baking spray.


In the bowl of a food processor pulse the pecans, dates, cocoa, vanilla and salt until the mixture is cohesive, no large lumps remain, and the mixture packs together when squeezed in your hand. Pour the mixture into the prepared baking pan and press down to spread out evenly.


Next, make the ganache: Melt the chocolate and coconut oil in a microwave safe bowl in 30 second increments, stirring in between until completely smooth. Add the salt and oat milk and whisk to combine into a smooth ganache.


Pour the ganache over the prepared brownie base and spread evenly using a small offset spatula or the back of a spoon.


Sprinkle with a handful of mini chocolate chips and refrigerate until set, about 30 minutes.


Cut into even squares and enjoy!


Best stored in an airtight container in the refrigerator.
