Mindful Baking

Because when everything seems unknown, I turn to what I know... BAKING!

While I don't want to dwell on COVID-19, I have to touch upon it because, after all, it is what brought me here. It is what brought me to this blog. A few weeks ago I was looped into an email chain that was created for friends to reconnect and share recipes during these uncertain times. It seems that people are reconnecting with their kitchens, old family recipes, and new techniques (whipped coffee?!, who would have thought!).

I thought it would be the perfect time to share my love for healthy baking. With a turn towards both comfort food and healthfulness in the light of the recent pandemic, it seems as though health conscious comfort food is where it's at! I like to take the most decadent desserts and transform them into my own version. And now, I want to share them with you!

This has been a goal of mine for years now, but life, work and school always seemed to get in the way. With this lull in life, I am taking it as an opportunity to grow and share with you all. I am taking this time to bake mindfully, to be grateful for those surrounding me in my kitchen and for the ingredients in my pantry. I am creating recipes that bring comfort to me and my loved ones, and recipes that will hopefully bring comfort to you as well.
