This granola is perfectly sweet and loaded with flax, chia and hemp! The orange zest and fresh ginger really brighten up this coconut-y granola! It's perfect on a smoothie bowl, on your yogurt or just as a little sweet and crunchy snack! Inspired by Bon Beri's recipe, this is truly one of my favorite granolas! :)
2 1/2 cups unsweetened flaked coconut
1/4 cup chia seeds
1/4 cup flax seed meal
1/4 cup hemp seed hearts
1/2 teaspoon cardamom
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 teaspoons freshly grated ginger
1 tablespoon orange zest
2 tablespoons coconut oil, melted
1/2 cup maple syrup
1/4 cup orange juice
1 teaspoon vanilla extract
Preheat the oven to 375 degrees F, and line a baking sheet with parchment paper.
In a large bowl combine the coconut, chia, flax, hemp, cardamom, cinnamon, nutmeg, ginger, and orange zest; toss to combine.
In a small microwave safe bowl melt the coconut oil. Stir in the maple syrup, orange juice and vanilla.
Pour the liquid ingredients over the dry and toss to coat the coconut flakes completely.
Spread out evenly on the baking sheet and bake, tossing the granola occasionally until dark golden brown! Allow to cool completely before transferring to an airtight storage container.
